Camote Cue (Sweet Potato Fritters)

Ingredients

  • 2 pieces Sweet Potatoes (medium, peeled and cubed)
  • 1/2 cup Brown Sugar
  • 1/2 cup Vegetable Oil (for frying)

Instructions

  1. 1Place a 10-inch skillet over medium heat (350°F/175°C). Add the 1/2 cup of vegetable oil to the skillet.
  2. 2Carefully add the 2 pieces of sweet potatoes (medium, peeled and cubed) to the hot oil. Fry for 8 to 10 minutes, or until the sweet potato cubes are tender when poked with a fork. They should be slightly softened but not mushy.
  3. 3Sprinkle the 1/2 cup of brown sugar evenly over the sweet potatoes in the skillet. Continue to cook, stirring constantly, for about 2 to 3 minutes. Watch as the sugar melts and turns a deep amber color, coating the sweet potatoes.
  4. 4Once the sugar has caramelized and evenly coated the sweet potatoes, immediately remove the skillet from the heat.
  5. 5Using a slotted spoon, transfer the caramelized sweet potatoes to a plate lined with paper towels. Allow them to drain for 1 to 2 minutes to absorb any excess oil.
  6. 6Serve the Camote Cue warm.
