Ingredients

  • 1 lb Beef sirloin, thinly sliced
  • 8 oz Rice vermicelli noodles
  • 1 cup Carrots, julienned
  • 1 cup Cucumber, julienned
  • 1 cup Bean sprouts
  • 4 cups Lettuce
  • 3 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 2 tablespoons Hoisin sauce
  • 2 cloves Garlic, minced
  • 1 teaspoon Sesame oil
  • 2 tablespoons Peanuts, crushed

Instructions

  1. 1Cook rice vermicelli noodles according to package directions. Drain and set aside.
  2. 2In a bowl, combine beef with 1 tablespoon soy sauce and sesame oil. Marinate for 10 minutes.
  3. 3Heat oil in a wok or large skillet over high heat. Stir-fry beef until cooked through, about 3-4 minutes. Remove from skillet and set aside.
  4. 4In the same skillet, add carrots, cucumber, and bean sprouts. Stir-fry for 2-3 minutes, until slightly tender.
  5. 5Add cooked rice vermicelli noodles and beef to the skillet. Pour remaining soy sauce and hoisin sauce over noodles and beef. Stir-fry until everything is well combined.
  6. 6Serve over lettuce. Garnish with crushed peanuts or sunflower seeds.
