Black Bean Burgers on Gluten-Free Buns

Ingredients

  • 2 cans Black beans
  • 1 cup Cooked brown rice
  • 1/2 medium Red onion
  • 1/2 medium Bell pepper
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 4 count Gluten-free buns
  • 1 medium Avocado
  • 1/2 cup Salsa
  • 4 leaves Lettuce

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Rinse and drain the black beans.
  3. 3In a large bowl, mash the black beans with a fork or potato masher.
  4. 4Add the cooked brown rice, diced red onion, diced bell pepper, chili powder, cumin, garlic powder, salt, and pepper to the mashed black beans.
  5. 5Mix well until all ingredients are combined.
  6. 6Shape the mixture into 4 patties.
  7. 7Place the patties on a baking sheet lined with parchment paper.
  8. 8Bake for 20-25 minutes, flipping halfway through, until the patties are heated through and slightly crispy.
  9. 9Serve the black bean burgers on gluten-free buns with avocado, salsa, and lettuce.
