Ingredients

  • 2 cups Glutinous rice (sweet rice)
  • 2 cans Coconut milk
  • 1 1/2 cups Brown sugar
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Salt

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. 2Rinse the glutinous rice and drain well.
  3. 3In a large pot, combine the rice, coconut milk, brown sugar, vanilla extract, and salt.
  4. 4Bring to a boil over medium heat, then reduce heat to low and simmer, stirring constantly, until the rice is cooked through and the mixture has thickened (about 30-40 minutes).
  5. 5Pour the mixture into the prepared baking pan and spread evenly.
  6. 6Bake for 45-60 minutes, or until the top is golden brown and the biko is set.
  7. 7Let cool completely before cutting into squares and serving.
