Barszcz Ukraiński (Ukrainian Beet Soup)

Ingredients

  • 4 medium Beets
  • 2 medium Carrots
  • 3 medium Potatoes
  • 1 large Onion
  • 8 cups Vegetable broth
  • 0.5 small head Cabbage
  • 2 tbsp Tomato paste
  • 3 cloves Garlic
  • 2 tbsp Lemon juice
  • 2 tbsp Olive oil
  • 2 leaves Bay leaf
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh dill

Instructions

  1. 1Peel and chop the beets, carrots, potatoes, and onion.
  2. 2Shred the cabbage and mince the garlic.
  3. 3Heat the olive oil in a large pot over medium heat.
  4. 4Add the onion and garlic and sauté until softened, about 5 minutes.
  5. 5Add the beets, carrots, and potatoes to the pot and cook for another 5 minutes.
  6. 6Stir in the tomato paste and cook for 1 minute.
  7. 7Pour in the vegetable broth and add the bay leaves.
  8. 8Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes.
  9. 9Add the shredded cabbage and cook for another 15 minutes, or until all vegetables are tender.
  10. 10Stir in the lemon juice, salt, and pepper. Taste and adjust seasoning as needed.
  11. 11Remove the bay leaves before serving.
  12. 12Garnish with fresh dill and serve hot.
