Ingredients

  • 2 cans Coconut milk
  • 1/2 cup Sugar
  • 2 tsp Agar-agar powder
  • 1 tsp Vanilla extract
  • 1/4 cup Water

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a medium saucepan, combine the 1/4 cup of water and the 2 teaspoons of agar-agar powder. Let this mixture sit undisturbed for 5 minutes to allow the agar-agar powder to hydrate.
  2. 2Add the 2 cans of coconut milk and the 1/2 cup of sugar to the saucepan with the agar-agar mixture. Stir everything together until well combined.
  3. 3Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally, and cook for 5 minutes. Continue stirring until you can no longer see any sugar granules and the agar-agar powder is fully dissolved. The mixture should be smooth and slightly thickened.
  4. 4Remove the saucepan from the heat. Stir in the 1 teaspoon of vanilla extract until it is evenly distributed throughout the mixture.
  5. 5Carefully pour the warm flan mixture into 6 individual ramekins or a single larger mold. Ensure the liquid is distributed evenly among the ramekins if using individual ones.
  6. 6Allow the flan mixture to cool at room temperature for about 15-20 minutes, or until it is no longer steaming. This initial cooling helps prevent cracking. Then, cover the ramekins or mold loosely with plastic wrap and transfer them to the refrigerator. Chill for at least 2 hours, or until the flan is completely set and firm to the touch.
  7. 7To serve, gently run a thin knife or offset spatula around the inside edge of each ramekin to loosen the flan. Place a serving plate upside down over the top of a ramekin, and then carefully invert them together. Lift off the ramekin to release the flan onto the plate. Repeat for all ramekins.
