Banana Que (Caramelized Banana Skewers)

Ingredients

  • 8 each Saba Bananas
  • 1/2 cup Brown Sugar
  • 2 tablespoons Neutral Oil
  • 4 each Bamboo Skewers

Instructions

  1. 1Peel the 8 Saba Bananas. Cut each banana in half crosswise, so you have 16 banana pieces.
  2. 2Thread two banana halves onto each of the 4 Bamboo Skewers. You will have 4 skewers, each with 4 banana halves.
  3. 3Place a large skillet over medium heat. Add the 2 tablespoons of Neutral Oil to the skillet. Heat the oil until it shimmers, about 2 minutes.
  4. 4Carefully add the 1/2 cup of Brown Sugar to the hot oil in the skillet. Stir the sugar gently as it melts and begins to bubble and turn a deep amber color, about 3-5 minutes. Watch closely to prevent the sugar from burning.
  5. 5Gently place the 4 Banana Que skewers into the caramelized sugar. Cook for 2-3 minutes on each side, turning the skewers carefully with tongs. The bananas should be golden brown and coated in the caramel. The sugar will be very hot.
  6. 6Remove the Banana Que skewers from the skillet and place them on a heatproof surface to cool slightly, about 2-3 minutes. This allows the caramel to set a little.
  7. 7Serve the 4 Banana Que skewers hot.
