Ingredients

  • 6 medium Saba Bananas
  • 1 cup Langka (Jackfruit)
  • 12 pieces Spring Roll Wrappers
  • 1/2 cup Brown Sugar
  • 2 cups Cooking Oil

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Peel the 6 medium Saba Bananas. Cut each banana in half lengthwise.
  2. 2Place one half of a banana and a few pieces of the 1 cup Langka (Jackfruit) onto the center of a spring roll wrapper. Tightly roll the wrapper around the filling. Moisten the edges of the wrapper with a little water and press to seal the roll completely.
  3. 3Pour the 2 cups of Cooking Oil into a large, heavy-bottomed pot or a deep skillet. Heat the oil over medium-high heat until it reaches 175°C.
  4. 4Carefully place 3-4 rolled turon into the hot oil. Fry for 5-7 minutes, turning occasionally, until the wrappers are golden brown and crispy on all sides. Use a slotted spoon to remove the cooked turon from the oil and place them on a plate lined with paper towels to drain.
  5. 5Reduce the heat to medium. Sprinkle the 1/2 cup Brown Sugar into the hot oil in the pot. Stir gently as the sugar melts and begins to caramelize, which should take about 1-2 minutes. Watch carefully to prevent burning.
  6. 6Return the fried turon to the pot with the caramelizing sugar. Toss them gently to coat evenly. Continue to cook for another 1-2 minutes, until the sugar forms a hard, glossy coating around the turon. This coating should look amber-colored and slightly bubbly.
  7. 7Immediately remove the coated turon from the pot using tongs or a slotted spoon. Place them on a clean plate or a wire rack to cool slightly and for the caramel to harden. Serve the Banana Cue Turon with Langka warm.
