Ingredients
- 4 pieces Saba bananas (plantains)
- 1/2 cup Brown sugar
- 1 cup Vegetable oil
- 4 pieces Bamboo skewers
Instructions
- 1Peel the 4 Saba bananas and cut each banana in half lengthwise. Place each banana half onto one of the 4 Bamboo skewers.
- 2Pour the 1 cup of Vegetable oil into a large, heavy-bottomed skillet. Heat the oil over medium heat, which is 350°F (175°C).
- 3Add the 1/2 cup of Brown sugar to the hot oil. Stir constantly for 1-2 minutes until the sugar melts and turns a deep amber color, like dark honey. Be careful not to let it burn.
- 4Carefully place the 4 skewered bananas into the hot, caramelized sugar. Fry the bananas for 2-3 minutes per side. They are done when they are golden brown and the sugar coating is thick and bubbly.
- 5Use tongs to remove the Banana Cues from the skillet. Place them on a plate lined with paper towels to drain any excess oil for 1 minute. Serve immediately.
