Ingredients

  • 1.5 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 0.5 tsp Baking Soda
  • 2 tbsp Sugar
  • 0.25 tsp Salt
  • 1 piece Egg
  • 1.5 cup Water
  • 1 tbsp Vegetable Oil
  • 0.5 cup Roasted Peanuts
  • 0.25 cup Sugar
  • 0.5 cup Creamed Corn

Instructions

  1. 1In a bowl, whisk together flour, baking powder, baking soda, sugar, and salt.
  2. 2In a separate bowl, whisk the egg and water. Add the wet ingredients to the dry ingredients and mix until smooth.
  3. 3Heat a non-stick pan or griddle over medium heat. Brush with vegetable oil.
  4. 4Pour a ladleful of batter onto the pan and spread it out into a circle.
  5. 5Cover the pan and cook for 3-4 minutes, or until bubbles start to form on the surface.
  6. 6Sprinkle crushed peanuts, sugar, and creamed corn over half of the pancake.
  7. 7Fold the pancake in half and press gently.
  8. 8Cook for another 1-2 minutes, or until golden brown.
  9. 9Remove from the pan and cut into wedges. Serve warm.
