Ingredients

  • 1 cup All-Purpose Flour
  • 1/4 cup Rice Flour
  • 1/4 cup Sugar
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/4 cup Aquafaba (Chickpea Brine)
  • 3/4 cup Water
  • for greasing as needed Vegetable Oil
  • 1/2 cup Roasted Peanuts, crushed
  • 2 tablespoons Sugar
  • 1/4 cup Creamed Corn

Instructions

  1. 1In a bowl, mix all-purpose flour, rice flour, sugar, baking soda, baking powder, and salt.
  2. 2In a separate bowl, whisk aquafaba until frothy.
  3. 3Add aquafaba and water to the dry ingredients and mix well to form a smooth batter.
  4. 4Heat a lightly oiled griddle or pan.
  5. 5Pour a ladle of batter onto the griddle and spread it into a circle.
  6. 6Cook until the bottom is golden brown and bubbles start to form on the surface.
  7. 7Sprinkle crushed peanuts, sugar, and creamed corn over half of the pancake.
  8. 8Fold the pancake in half and cook for another minute until golden brown.
  9. 9Remove and cut into wedges. Serve hot.
