Apam Balik (Gluten-Free)

A sweet, pancake-like turnover filled with a sweet peanut, sugar, and corn mixture. This version uses gluten-free flour.

Ingredients

  • 1 cup Gluten-Free Flour
  • 0.5 cup Rice Flour
  • 2 tbsp Sugar
  • 1 tsp Baking Powder
  • 0.5 tsp Yeast
  • 1 cup Water
  • 0.5 cup Peanuts, ground
  • 0.25 cup Creamed Corn
  • 2 tbsp Butter
  • 0.25 cup Sugar

Instructions

  1. 1In a bowl, mix gluten-free flour, rice flour, sugar, baking powder, and yeast.
  2. 2Gradually add water and mix until a smooth batter forms. Let it rest for 30 minutes.
  3. 3Heat a non-stick pan or griddle over medium heat. Brush with butter.
  4. 4Pour a ladleful of batter onto the pan and spread evenly.
  5. 5Cook until bubbles appear on the surface and the bottom is golden brown.
  6. 6Sprinkle ground peanuts, creamed corn, and sugar over one half of the pancake.
  7. 7Fold the pancake in half and press gently.
  8. 8Cook for another minute until the filling is slightly melted and the pancake is golden brown.
  9. 9Cut into wedges and serve immediately.
