Ingredients

  • 1 cup Rolled Oats
  • 1/2 cup Shredded Coconut
  • 1/2 cup All-Purpose Flour
  • 1/2 cup Brown Sugar
  • 1/4 cup Unsalted Butter
  • 2 tablespoons Golden Syrup
  • 1/2 teaspoon Baking Soda
  • 1 tablespoon Boiling Water

Instructions

  1. 1Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. 2In a large bowl, combine rolled oats, shredded coconut, flour, and brown sugar.
  3. 3In a saucepan, melt butter and golden syrup over low heat. Remove from heat.
  4. 4Dissolve baking soda in boiling water and add to the butter mixture. It will fizz.
  5. 5Pour the wet ingredients into the dry ingredients and mix well.
  6. 6Roll the mixture into small balls (about 1 inch in diameter) and place them on the prepared baking sheet.
  7. 7Bake for 10-12 minutes, or until golden brown.
  8. 8Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
