Agua de Jamaica (Hibiscus Tea)

A refreshing and tart iced tea made from dried hibiscus flowers. A classic Mexican beverage.

Ingredients

  • 1 cup Dried Hibiscus Flowers
  • 8 cups Water
  • 0.5 cup Sugar
  • 2 tablespoons Lime Juice

Instructions

  1. 1In a large heavy-bottomed pot, combine the 8 cups of water and bring it to a rolling boil over high heat. This should take about 5-7 minutes.
  2. 2Once the water is boiling, carefully add the 1 cup of Dried Hibiscus Flowers and the 0.5 cup of Sugar. Stir well until the sugar has completely dissolved, which should take about 1 minute.
  3. 3Reduce the heat to low, cover the pot, and let the mixture simmer gently for 15 to 20 minutes. You will see the liquid turn a deep red color and the flowers will soften.
  4. 4Remove the pot from the heat and let it steep, covered, for at least 30 minutes. This allows the hibiscus flavor to fully infuse into the water.
  5. 5Carefully strain the liquid through a fine-mesh sieve set over a large bowl or pitcher to remove all the hibiscus flowers. Discard the flowers.
  6. 6Stir in the 2 tablespoons of Lime Juice until fully combined.
  7. 7Place the pot or pitcher in the refrigerator and chill for at least 1 hour, or until thoroughly cold. This step is important for serving the Agua de Jamaica refreshing.
  8. 8Serve the chilled Agua de Jamaica over ice.
