Ingredients

  • 6 cups Fresh Corn Kernels
  • 1 can Coconut Milk
  • 1/2 cup Granulated Sugar
  • 2 tbsp Coconut Oil
  • 1/4 tsp Salt
  • 6 Corn Husks (optional)

Instructions

  1. 1If using corn husks, soak them in warm water to soften.
  2. 2In a blender or food processor, blend the corn kernels, coconut milk, sugar, coconut oil, and salt until smooth.
  3. 3If using corn husks, spoon the corn mixture into the husks and tie them securely. If not using husks, pour the mixture into a greased baking dish.
  4. 4Steam the pamonha in a steamer or a pot with a steamer basket for 40-45 minutes, or until set. If baking, bake in a preheated oven at 350°F (175°C) for 45-50 minutes, or until set.
  5. 5Let the pamonha cool slightly before serving. Serve warm or at room temperature.
