A paleo take on the South African Bunny Chow, traditionally served in a bread loaf. This version uses a baked sweet potato as the vessel, filled with a delicious lamb curry.

Ingredients

  • 4 medium Sweet potatoes
  • 1.5 lb Lamb, cubed
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Curry powder
  • 1 can Coconut milk
  • 2 tbsp Tomato paste
  • 1 tsp Ginger, grated
  • 1/4 tsp Chili flakes
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Preheat oven to 400°F (200°C). Bake sweet potatoes for 45-60 minutes, or until tender.
  2. 2While sweet potatoes are baking, heat olive oil in a large pot or Dutch oven over medium-high heat.
  3. 3Brown cubed lamb on all sides. Remove from pot and set aside.
  4. 4Add chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  5. 5Stir in curry powder, tomato paste, grated ginger, and chili flakes. Cook for 1 minute.
  6. 6Return the lamb to the pot. Pour in coconut milk. Bring to a simmer.
  7. 7Reduce heat to low, cover, and simmer for 30-40 minutes, or until the lamb is tender.
  8. 8Cut the baked sweet potatoes lengthwise and scoop out some of the flesh to create a well.
  9. 9Fill each sweet potato with the lamb curry. Serve hot.
