Ingredients

  • 1 large Onion, chopped
  • 1 medium Green bell pepper, chopped
  • 1 medium Carrots, grated
  • 1 can Baked beans
  • 1 tsp Chili powder
  • 1 tsp Curry powder
  • 2 cloves Garlic, minced
  • 1 can Diced tomatoes
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 cup Maize meal (coarsely ground)
  • 4 cups Water
  • 1/4 tsp Salt

Instructions

  1. 1In a large pot or saucepan, heat the olive oil over medium heat.
  2. 2Add the chopped onion, green bell pepper, and grated carrots to the pot and cook until softened, about 5 minutes.
  3. 3Stir in the garlic, chili powder, and curry powder. Cook for 1 minute, until fragrant.
  4. 4Add the diced tomatoes and baked beans to the pot. Simmer for 15-20 minutes, allowing the flavors to meld.
  5. 5Season with salt and pepper to taste.
  6. 6While the chakalaka is simmering, prepare the pap. Bring the water to a boil in a saucepan. Add salt.
  7. 7Slowly whisk in the maize meal, stirring constantly to prevent lumps from forming.
  8. 8Reduce heat to low and cook for 20-30 minutes, stirring occasionally, until the pap is thick and smooth.
  9. 9Serve the chakalaka hot with the pap.
