Ingredients

  • 1 cup Maize Meal
  • 1 cup All-Purpose Flour
  • 1/2 cup Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Dairy-Free Milk
  • 1/4 cup Vegetable Oil
  • 1 tbsp Flaxseed Meal
  • 3 tbsp Water
  • 1 can Canned Corn

Instructions

  1. 1Preheat oven to 375°F (190°C). Grease a baking pan.
  2. 2In a large bowl, whisk together maize meal, all-purpose flour, sugar, baking powder, and salt.
  3. 3In a separate bowl, mix flaxseed meal with water and let it sit for 5 minutes to form a gel (flax egg).
  4. 4Add dairy-free milk and vegetable oil to the flax egg mixture and whisk to combine.
  5. 5Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. 6Fold in canned corn.
  7. 7Pour the batter into the prepared baking pan.
  8. 8Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
