Ingredients

  • 1 cup Brown or green lentils
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalks Celery
  • 3 cloves Garlic
  • 1 28 oz can Diced tomatoes
  • 4 cups Vegetable broth
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Potato
  • 4 oz Chorizo (optional, plant based)

Instructions

  1. 1Rinse lentils thoroughly.
  2. 2Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrot, and celery and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. 3Stir in diced tomatoes, vegetable broth, smoked paprika, oregano, bay leaf, salt, and pepper. Bring to a boil.
  4. 4Add lentils and potato. Reduce heat to low, cover, and simmer for 30-40 minutes, or until lentils are tender.
  5. 5If using chorizo, add it during the last 15 minutes of cooking.
  6. 6Remove bay leaf before serving.
