Ingredients

  • 4 cups Fresh corn kernels
  • 0.5 medium Onion
  • 0.25 medium Red bell pepper
  • 0.5 cup Milk
  • 1 tbsp Cornstarch
  • 2 tbsp Water
  • 2 tbsp Butter
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.5 tsp Paprika

Instructions

  1. 1If using fresh corn on the cob, cut the kernels off the cob.
  2. 2Chop the onion and red bell pepper.
  3. 3In a large skillet, melt the butter over medium heat. Add the onion and red bell pepper and cook until softened.
  4. 4Add the corn kernels and cook for 5 minutes, stirring occasionally.
  5. 5In a bowl, whisk together the cornstarch and water to form a slurry. Add the milk and stir well.
  6. 6Pour the cornstarch mixture over the corn mixture. Stir constantly until the mixture thickens.
  7. 7Season with salt, pepper and paprika. Cook for a few more minutes.
  8. 8Serve warm as a snack or side dish.
