Ingredients

  • 1 pound Lamb Stew Meat
  • 1/2 cup Yellow Split Peas
  • 2 medium Eggplant
  • 1 large Onion
  • 2 tablespoons Tomato Paste
  • 1/2 cup Coconut Milk
  • 3 whole Dried Limes
  • 1/2 teaspoon Turmeric
  • 1/4 teaspoon Saffron
  • 2 tablespoons Vegetable Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

  1. 1Soak yellow split peas in water for at least 30 minutes.
  2. 2Cut lamb into small pieces.
  3. 3Sauté chopped onion in vegetable oil until softened.
  4. 4Add lamb and brown on all sides.
  5. 5Add turmeric, tomato paste, and cook for 2 minutes.
  6. 6Add drained split peas, dried limes, salt, pepper, and enough water to cover the meat and peas.
  7. 7Bring to a boil, then reduce heat and simmer for 1 hour, or until meat and peas are tender.
  8. 8While the stew is simmering, peel and cube the eggplant. Fry in vegetable oil until golden brown.
  9. 9Add fried eggplant and coconut milk to the stew.
  10. 10Simmer for another 15 minutes to allow flavors to meld.
  11. 11Stir in saffron water (if using).
  12. 12Serve small portions as 'bites'.
