Ingredients

  • 2 cups Basmati Rice
  • 1 cup Green Lentils
  • 2 large Onions
  • 0.5 cup Pitted Dates
  • 0.25 teaspoon Saffron threads
  • 0.5 teaspoon Cinnamon
  • 3 tablespoons Vegetable Oil
  • 1 teaspoon Salt
  • 3 cups Water

Instructions

  1. 1Rinse the rice until the water runs clear. Soak for 30 minutes.
  2. 2Cook the lentils in water until tender but not mushy. Drain and set aside.
  3. 3Thinly slice the onions and caramelize them in vegetable oil over medium heat until golden brown.
  4. 4Dissolve saffron threads in 2 tablespoons of hot water.
  5. 5In a pot, combine the soaked rice, cooked lentils, caramelized onions, chopped dates, saffron water, cinnamon, salt, and water.
  6. 6Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked through and the water is absorbed.
  7. 7Fluff the rice with a fork before serving.
