Ingredients

  • 2 cups Basmati Rice
  • 1 cup Green Lentils
  • 2 tablespoons Coconut Oil
  • 1 medium Onion
  • 1/2 cup Raisins
  • 1/4 cup Dates
  • 1/4 teaspoon Saffron
  • 1/4 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 3 cups Water

Instructions

  1. 1Rinse rice and lentils separately.
  2. 2Soak the rice in water for at least 30 minutes.
  3. 3Sauté chopped onion in coconut oil until softened.
  4. 4Add lentils, raisins, dates, saffron (if using), cinnamon, and salt. Cook for 5 minutes.
  5. 5Drain the rice and add it to the pot.
  6. 6Add water and bring to a boil.
  7. 7Reduce heat to low, cover, and simmer for 35-40 minutes, or until rice is cooked through.
  8. 8Fluff with a fork and serve.
