Ingredients

  • 1 block Firm tofu
  • 1 lb Spinach
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 inch Ginger
  • 2 small Green chilies
  • 1 can Coconut milk
  • 1 tsp Garam masala
  • 1 tsp Cumin powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Salt
  • 2 tbsp Ghee (Dairy-Free)
  • 1 tbsp Lemon juice

Instructions

  1. 1Press the tofu to remove excess water, then cut into cubes.
  2. 2Blanch the spinach in boiling water for 1 minute, then transfer to an ice bath. Drain well and blend into a smooth puree.
  3. 3Heat ghee in a large skillet over medium heat. Add onion and cook until softened.
  4. 4Add garlic, ginger, and green chilies and cook for another minute.
  5. 5Stir in spinach puree, coconut milk, garam masala, cumin powder, turmeric powder, and salt.
  6. 6Bring to a simmer and add the tofu cubes. Cook for 10 minutes, stirring occasionally.
  7. 7Stir in lemon juice before serving. Serve hot with cauliflower rice or on its own.
