Ingredients

  • 1 pound Carrots
  • 3/4 cup Cane Sugar
  • 2 cans Full-Fat Coconut Milk
  • 1 tablespoon Rosewater
  • 1/4 teaspoon Saffron Threads
  • 1 tablespoon Cornstarch
  • 1 teaspoon Vanilla Extract

Instructions

  1. 1Boil the carrots until tender, about 15 minutes. Drain well.
  2. 2In a blender, combine the boiled carrots, sugar, coconut milk, rosewater, saffron water, cornstarch, and vanilla extract.
  3. 3Blend until completely smooth.
  4. 4Pour the mixture into a saucepan and cook over medium heat, stirring constantly, until it thickens slightly. This will activate the cornstarch.
