Haupia Mochi Bites

Ingredients

  • 1 cup Glutinous Rice Flour (Mochiko)
  • 1/2 cup Granulated Sugar
  • 1 can Coconut Milk
  • 1/4 cup Cornstarch
  • 1 cup Water
  • 2 tablespoons Shredded Coconut

Instructions

  1. 1For the haupia filling: In a saucepan, whisk together coconut milk, sugar, and cornstarch. Cook over medium heat, stirring constantly, until thickened.
  2. 2Let the haupia filling cool completely.
  3. 3For the mochi: In a microwave-safe bowl, combine glutinous rice flour, sugar, and water. Mix well.
  4. 4Cover and microwave for 2 minutes. Stir well and microwave for another 1-2 minutes, until the mochi is translucent and sticky.
  5. 5Dust a work surface with cornstarch. Turn out the mochi dough and let cool slightly. Cut into small squares.
  6. 6Flatten each mochi square and fill with a spoonful of haupia. Pinch the edges to seal.
  7. 7Roll the mochi balls in shredded coconut.
