Gluten-Free Vegetable Biryani

Ingredients

  • 2 cups Basmati Rice
  • 3 cups Mixed Vegetables (carrots, peas, beans, potatoes)
  • 1 large Onion
  • 2 medium Tomato
  • 2 tablespoons Ginger-Garlic Paste
  • 2 tablespoons Biryani Masala
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 3 tablespoons Ghee or Vegetable Oil
  • 2 tablespoons Cilantro
  • 2 tablespoons Mint Leaves
  • 1 teaspoon Salt

Instructions

  1. 1Wash the basmati rice and soak it for 30 minutes.
  2. 2In a large pot, heat ghee or oil. Add sliced onion and sauté until golden brown.
  3. 3Add ginger-garlic paste and sauté for a minute.
  4. 4Add chopped tomatoes and cook until softened.
  5. 5Add mixed vegetables, biryani masala, turmeric powder, red chili powder, and salt. Sauté for 5 minutes.
  6. 6Drain the soaked rice and add it to the pot. Add 4 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the rice is cooked and the water is absorbed.
  7. 7Garnish with chopped cilantro and mint leaves. Serve hot.
