Ingredients

  • about 450 g Ground turkey
  • 2 each Avocado
  • 2 tablespoons Lime juice
  • 1/4 cup Red onion
  • 1 each Bell pepper
  • 1/4 cup Cilantro
  • 1 teaspoon Chili powder
  • 1/2 teaspoon Cumin
  • 12-16 leaves Lettuce leaves (butter or romaine)
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Place about 450 g of ground turkey in a 25.4 cm skillet over medium-high heat (176.7°C/175°C). Cook, breaking up the meat with a spoon, until it is no longer pink and is browned, about 5-7 minutes. Drain off any extra fat from the skillet.
  2. 2Add the 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to the skillet with the browned turkey. Stir well to combine and cook for 2-3 more minutes until the spices are fragrant.
  3. 3While the turkey cooks, prepare the avocado. In a medium bowl, mash the 2 avocados with the 2 tablespoons lime juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until mostly smooth. You can leave a few small chunks if you prefer.
  4. 4Finely dice the 1/4 cup red onion and the 1 each bell pepper. Roughly chop the 1/4 cup cilantro.
  5. 5To assemble the wraps, take 12-16 lettuce leaves. Spoon a portion of the seasoned turkey mixture into each lettuce leaf. Top the turkey with a spoonful of the mashed avocado mixture, then sprinkle with the diced red onion, diced bell pepper, and chopped cilantro.
  6. 6Serve the gluten-free turkey and avocado lettuce wraps immediately.
