Ingredients

  • 1 lb Lean beef sirloin, thinly sliced
  • 1/4 cup Soy sauce (gluten-free tamari)
  • 2 tbsp Worcestershire sauce (vegan)
  • 1 tbsp Maple syrup
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Black pepper

Instructions

  1. 1In a medium bowl, combine the 1/4 cup soy sauce (gluten-free tamari), 2 tablespoons Worcestershire sauce (vegan), 1 tablespoon maple syrup, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1/2 teaspoon black pepper. Whisk these ingredients together until they are well combined.
  2. 2Add the 1 lb lean beef sirloin, thinly sliced, to the marinade. Use your hands or tongs to toss the beef slices until they are all evenly coated with the marinade. Cover the bowl and place it in the refrigerator to marinate for at least 4 hours, or preferably overnight.
  3. 3Preheat your oven to 175°F (80°C). Set up a wire rack over a baking sheet. This setup will allow air to circulate around the beef as it bakes.
  4. 4Remove the marinated beef slices from the refrigerator and arrange them in a single layer on the prepared wire rack. Ensure the slices do not overlap so they dry evenly.
  5. 5Place the baking sheet with the beef into the preheated oven. Bake for 4 to 6 hours. The beef is done when it is dry and leathery to the touch. Check the jerky every hour, and remove any pieces that feel dry and leathery sooner than the 4-hour mark.
  6. 6Once all the beef slices are dry and leathery, remove the baking sheet from the oven. Let the beef jerky cool completely on the wire rack. This cooling step is important for texture and prevents condensation when storing.
  7. 7After the jerky has cooled completely, store it in an airtight container at room temperature.
