Ingredients

  • 4 pieces Chicken legs or thighs
  • 1 cup Yogurt
  • 2 tbsp Ginger-garlic paste
  • 2 tbsp Tandoori masala
  • 1 tbsp Lemon juice
  • 1 tbsp Vegetable oil
  • 1 cup Broccoli florets
  • 1 cup Carrots
  • 1 cup Bell peppers

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a bowl, combine the 1 cup Yogurt, 2 tbsp Ginger-garlic paste, 2 tbsp Tandoori masala, 1 tbsp Lemon juice, and 1 tbsp Vegetable oil. Mix well to create the marinade.
  2. 2Add the 4 pieces Chicken legs or thighs to the bowl with the marinade. Turn the chicken pieces to coat them completely. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight.
  3. 3Preheat your oven to about 205°C (200°C).
  4. 4On a large baking sheet, toss the 1 cup Broccoli florets, 1 cup Carrots, and 1 cup Bell peppers with a little of the 1 tbsp Vegetable oil (you may need a touch more than what's left from the marinade, use what you have) and a pinch of salt if desired. Spread the vegetables in a single layer.
  5. 5Arrange the marinated chicken pieces on the same baking sheet with the vegetables, ensuring they are not overcrowded.
  6. 6Place the baking sheet in the preheated oven. Roast for 35-40 minutes. The chicken is cooked through when its internal temperature reaches 74°C, and the vegetables should be tender and slightly browned.
  7. 7Remove the baking sheet from the oven and let the chicken rest for 5 minutes before serving. Serve the hot tandoori chicken with the roasted vegetables.
