Gluten-Free Irish Soda Bread Scones

Ingredients

  • 2 cups Gluten-Free All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 tablespoons Sugar
  • 1/2 cup Cold Butter
  • 3/4 cup Buttermilk
  • 1 large Egg

Instructions

  1. 1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2In a large bowl, whisk together gluten-free flour, baking soda, salt, and sugar.
  3. 3Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. 4Gradually add the buttermilk, mixing until just combined. Do not overmix.
  5. 5Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick circle.
  6. 6Cut out scones using a biscuit cutter or knife.
  7. 7Place scones on the prepared baking sheet.
  8. 8Brush the tops of the scones with beaten egg.
  9. 9Bake for 20-25 minutes, or until golden brown.
