Gluten-Free Black Forest Cherry Oatmeal

Ingredients

  • 2 cups Gluten-free rolled oats
  • 4 cups Milk
  • 1 cup Frozen cherries
  • 2 tablespoons Cocoa powder
  • 2 tablespoons Maple syrup
  • 1 teaspoon Vanilla extract
  • 1/4 cup Dark chocolate chips

Instructions

  1. 1In a medium saucepan, combine the 2 cups of gluten-free rolled oats and the 4 cups of milk. Place the saucepan over medium heat.
  2. 2Bring the mixture to a boil, which should take about 5-7 minutes. Once boiling, immediately reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes. Stir occasionally to prevent sticking. The oatmeal is done when it looks thick and creamy.
  3. 3Stir in the 1 cup of frozen cherries, the 2 tablespoons of cocoa powder, the 2 tablespoons of maple syrup, and the 1 teaspoon of vanilla extract. Continue to cook and stir for another 2-3 minutes, until the cherries are heated through and the mixture is well combined.
  4. 4Carefully divide the hot oatmeal into four bowls.
  5. 5Sprinkle the 1/4 cup of dark chocolate chips over the top of the oatmeal in each bowl. The residual heat will slightly melt the chocolate.
  6. 6Serve the oatmeal immediately.
