Ghanaian Koose (Bean Fritters)

Ingredients

  • 2 cups Black-Eyed Peas, soaked overnight
  • 1 medium Onion, chopped
  • 1/2 medium Red Bell Pepper, chopped
  • 1/2 small Scotch Bonnet Pepper, minced
  • 1 teaspoon Ginger, grated
  • 1 teaspoon Salt
  • 2 cups Vegetable Oil, for frying

Instructions

  1. 1Drain the 2 cups of black-eyed peas that were soaked overnight. Place the drained peas into a food processor and blend until they form a smooth paste.
  2. 2Add the chopped 1 medium onion, chopped 1/2 medium red bell pepper, minced 1/2 small scotch bonnet pepper, grated 1 teaspoon ginger, and 1 teaspoon salt to the food processor with the blended peas. Mix everything together until well combined.
  3. 3Pour the 2 cups of vegetable oil into a large, heavy-bottomed pot or deep fryer. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  4. 4Carefully drop rounded spoonfuls of the bean mixture into the hot 2 cups of vegetable oil. Make sure not to put too many spoonfuls in at once, as this can lower the oil temperature and cause the fritters to stick together.
  5. 5Fry the fritters for 3 to 4 minutes on each side. They are done when they are a deep golden brown color and feel crispy to the touch.
  6. 6Use a slotted spoon to remove the cooked fritters from the hot oil. Place them on a plate lined with paper towels to absorb any excess oil.
  7. 7Serve the Ghanaian Koose hot.
