Gambas al Ajillo (Garlic Shrimp) - Gluten-Free

Ingredients

  • 1 lb Shrimp
  • 6 cloves Garlic
  • 1/4 cup Olive Oil
  • 1/4 tsp Red Pepper Flakes
  • 1 tbsp Lemon Juice
  • 2 tbsp Cilantro
  • for serving as needed Gluten-Free Bread
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Peel and devein the 1 lb Shrimp. Mince the 6 cloves Garlic into very small pieces.
  2. 2Place a 12-inch skillet on the stove and add the 1/4 cup Olive Oil. Turn the heat to medium-high, which is 375°F (190°C).
  3. 3Add the minced 6 cloves Garlic and the 1/4 tsp Red Pepper Flakes to the hot olive oil. Cook, stirring constantly, until the garlic is fragrant and just starting to turn golden, about 30 seconds. Do not let the garlic burn.
  4. 4Carefully add the 1 lb Shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side, until the shrimp turn pink and opaque. Flip the shrimp and cook for another 2-3 minutes on the other side, until they are fully pink and cooked through. The internal temperature should reach 145°F (63°C).
  5. 5Remove the skillet from the heat. Stir in the 1 tbsp Lemon Juice, the 1/2 tsp Salt, and the 1/4 tsp Black Pepper until combined.
  6. 6Sprinkle the 2 tbsp Cilantro over the shrimp.
  7. 7Serve the Gambas al Ajillo immediately with slices of Gluten-Free Bread for dipping.
