Ingredients

  • 1 lb Dried Pinto Beans
  • 1 lb Smoked Sausage (plant based)
  • 6 slices Bacon (plant based)
  • 1 bunch Collard Greens, chopped
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 cup Cassava Flour (farinha)
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Soak the pinto beans in water overnight. Drain and rinse.
  2. 2In a large pot, cook the beans with water until tender, about 1 hour. Drain and set aside.
  3. 3In a large skillet, cook the bacon until crispy. Remove and crumble. Reserve the bacon fat.
  4. 4In the same skillet, sauté the sausage and onion in the bacon fat until the onion is translucent.
  5. 5Add the garlic and collard greens and cook until the greens are wilted, about 5 minutes.
  6. 6Stir in the cooked beans and crumbled bacon.
  7. 7Gradually add the cassava flour, stirring constantly to avoid lumps.
  8. 8Season with salt and pepper.
  9. 9Serve warm.
