Egyptian Shakshuka (Dairy-Free)

Ingredients

  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 2 medium Bell Peppers
  • 3 cloves Garlic
  • 28 oz Canned Crushed Tomatoes
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 8 large Eggs
  • 2 tablespoons Fresh Cilantro

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add chopped onion and bell peppers and cook until softened, about 5-7 minutes.
  3. 3Add minced garlic, cumin, coriander, paprika, salt, and pepper. Cook for another minute until fragrant.
  4. 4Pour in crushed tomatoes and bring to a simmer. Cook for 10 minutes, stirring occasionally.
  5. 5Create 8 small wells in the sauce using a spoon.
  6. 6Crack an egg into each well.
  7. 7Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.
  8. 8Garnish with fresh cilantro and serve hot with crusty bread (ensure bread is dairy and nut-free).
