Instructions

  1. 1In a large bowl, combine flour, yeast, and salt.
  2. 2Add warm water and olive oil, and mix until a shaggy dough forms.
  3. 3Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic.
  4. 4Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  5. 5Preheat oven to about 230°C.
  6. 6Divide the dough into 8 equal pieces. Roll each piece into a circle about 15.24-20.32 cm in diameter.

  8. 8Bake for 10-12 minutes, or until golden brown and puffed up.
  9. 9While the bread is baking, prepare the dukkah: Toast sesame seeds, coriander seeds, and cumin seeds in a dry skillet over medium heat until fragrant, about 3-5 minutes. Let cool slightly.
  10. 10Grind the toasted seeds with salt and pepper using a mortar and pestle or spice grinder until coarsely ground.
  11. 11Serve the warm Baladi bread with olive oil for dipping and dukkah for sprinkling.
