Ingredients

  • 1 cup All-purpose flour
  • 1 cup Coconut cream
  • 1/2 cup Applesauce (unsweetened)
  • 2 Eggs
  • 2 tablespoons Sugar
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
  • 2 cups Mixed berries (fresh or frozen)
  • 2 tablespoons Maple syrup
  • 2 tablespoons Dairy-free oil for frying

Instructions

  1. 1In a large bowl, add the 1 cup of all-purpose flour, 1 cup of coconut cream, 1/2 cup of unsweetened applesauce, 2 eggs, 2 tablespoons of sugar, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Mix everything together with a whisk or fork until you have a smooth batter with no lumps.
  2. 2Place a 10-inch non-stick skillet over medium heat. Let it warm up for about 1 minute.
  3. 3Once the skillet is warm, add the 2 tablespoons of dairy-free oil. Swirl the pan to coat the bottom evenly.
  4. 4Using a 1/4 cup measuring cup or a large spoon, scoop portions of the batter and carefully place them into the hot oil in the skillet. Leave some space between each pancake so they don't stick together. You should be able to fit about 3-4 syrniki at a time.
  5. 5Cook the syrniki for 3 to 4 minutes on the first side, until the edges look set and the bottom is a deep golden brown. Carefully flip each syrniki using a spatula and cook for another 3 to 4 minutes on the second side, until it is also golden brown and cooked through. Remove the cooked syrniki from the skillet and place them on a plate.
  6. 6While the syrniki are cooking, prepare the berry compote. In a medium saucepan, combine the 2 cups of mixed berries and 2 tablespoons of maple syrup. Place the saucepan over medium heat.
  7. 7Cook the berry mixture for 5 to 7 minutes, stirring occasionally, until the berries have softened and released their juices, creating a syrupy sauce. The compote is ready when the berries are tender and the liquid has thickened slightly.
  8. 8Serve the warm syrniki immediately, spooning the prepared berry compote over the top.
