Ingredients

  • 4 sheets Yufka pastry
  • 2 medium Potatoes
  • 1/4 medium Onion
  • 1/4 cup Fresh parsley
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Red pepper flakes
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 cup Sunflower oil (for frying)

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Place the 2 medium Potatoes in a medium pot and cover with water. Bring to a boil over high heat, then reduce heat to medium and cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork. Drain the potatoes, let them cool slightly, then peel them and mash them in a bowl.
  2. 2While the potatoes are boiling, heat the 2 tablespoons of olive oil in a 25.4 cm skillet over medium heat. Add the 1/4 medium onion, chopped, and cook for 3-5 minutes, stirring occasionally, until softened and translucent.
  3. 3Add the mashed potatoes to the skillet with the softened onion. Stir in the 1/4 cup fresh parsley, 1/2 teaspoon cumin, 1/4 teaspoon red pepper flakes, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix everything together well and cook for 2-3 minutes, stirring, until the mixture is heated through.
  4. 4Lay one sheet of Yufka pastry flat on a clean surface. Cut the sheet into 4 equal triangles. Repeat with the remaining 3 sheets of Yufka pastry, so you have a total of 16 triangles.
  5. 5Place about 1 tablespoon of the potato mixture onto the wide end of each Yufka triangle. Fold the two sides of the triangle inward over the filling, then tightly roll the pastry from the wide end to the pointed tip, creating a cigar shape. Repeat with all the filling and Yufka triangles.
  6. 6Pour the 1 cup of sunflower oil into a large, heavy-bottomed pot or deep skillet, ensuring it is at least 5.08 cm deep. Heat the sunflower oil over medium heat until it reaches 175°C. You can test if the oil is ready by dropping a tiny piece of Yufka into it; it should sizzle immediately.
  7. 7Carefully place 3-4 of the rolled böreği into the hot sunflower oil, being careful not to overcrowd the pot. Fry for 3-5 minutes per side, turning them occasionally with tongs, until they are a deep golden brown and crispy all over. Remove the fried böreği from the oil using a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.
  8. 8Repeat step 7 with the remaining böreği until all are fried. Serve the Dairy-Free Sigara Böreği hot.
