  • 8 Eggs
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Red Pepper Flakes
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoons Fresh Parsley
  • 1 cup Rice Flour
  • 3/4 cup Water
  • 1 tablespoon Olive Oil
  • 1/4 teaspoon Salt

Instructions

  1. 1Prepare the Menemen: Dice tomatoes, bell pepper, and onion.
  2. 2Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
  3. 3Add the diced tomatoes, red pepper flakes, salt, and pepper. Cook until the tomatoes break down and the sauce thickens, about 10-15 minutes.
  4. 4Whisk the eggs in a bowl and pour them into the skillet. Cook, stirring occasionally, until the eggs are set but still slightly moist, about 5 minutes.
  5. 5Stir in fresh parsley and set aside.
  6. 6Make the Flatbread: In a bowl, combine rice flour, water, olive oil, and salt.
