Dairy-Free Sigara Boregi (Turkish Cheese Rolls)

Ingredients

  • 8 sheets Yufka Pastry
  • 1 cup Red Lentils
  • 2 cups Vegetable Broth
  • 1 medium Onion
  • 3 tbsp Olive Oil
  • 2 tbsp Tomato Paste
  • 1 tsp Cumin
  • 0.5 tsp Red Pepper Flakes
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper
  • 0.25 cup Unsweetened Almond Milk
  • 1 tbsp Sesame Seeds

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Cook lentils in vegetable broth until tender, about 20 minutes. Drain any excess liquid.
  3. 3Sauté diced onion in olive oil until softened. Add tomato paste, cumin, red pepper flakes, salt, and pepper. Cook for 2 minutes.
  4. 4Combine the cooked lentils with the onion mixture.
  5. 5Cut each yufka sheet into 4 wedges.
  6. 6Place a spoonful of the lentil filling at the wide end of each wedge. Roll up tightly, starting from the wide end, to form a cigar shape.
  7. 7Brush the rolls with almond milk and sprinkle with sesame seeds.
  8. 8Bake for 20-25 minutes, or until golden brown and crispy.
