Dairy-Free Persian Sweet Rice (Shirin Polo) with Orange Peel

Ingredients

  • 2 cups Basmati rice
  • 0.5 cup Orange peel (candied)
  • 0.25 cup Almonds (slivered)
  • 0.25 cup Pistachios (slivered)
  • 0.25 tsp Saffron threads
  • 2 tbsp Sugar
  • 1 tbsp Rosewater
  • 2 tbsp Olive oil

Instructions

  1. 1Rinse the basmati rice until the water runs clear. Soak in salted water for 30 minutes.
  2. 2If using homemade candied orange peel, ensure it's prepared in advance. If using store-bought, check for any unwanted ingredients.
  3. 3Strain the rice and boil in a pot of water for about 6-8 minutes until it's parboiled. Drain the rice.
  4. 4In a small bowl, dissolve the saffron threads in 2 tablespoons of hot water and add rosewater.
  5. 5In the same pot, layer the rice, candied orange peel, almonds, and pistachios. Sprinkle with saffron-rosewater mixture and sugar. Drizzle with olive oil.
  6. 6Cover the pot and cook over low heat for 20-25 minutes, or until the rice is fully cooked and fluffy.
