Ingredients

  • 2 cups Fresh Parsley
  • 1 cup Fresh Cilantro
  • 1 cup Fresh Dill
  • 1/2 cup Green Onions
  • 6 large Eggs
  • 1/4 cup Plant-Based Milk (e.g., Almond, Soy)
  • 1 tablespoon All-Purpose Flour
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Turmeric Powder
  • 2 tablespoons Barberries (Zereshk)
  • 2 tablespoons Walnuts, chopped
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Preheat your oven to 175°C.
  2. 2Finely chop the 2 cups of fresh parsley, 1 cup of fresh cilantro, 1 cup of fresh dill, and 1/2 cup of green onions.
  3. 3In a large bowl, whisk together the 6 large eggs, 1/4 cup of plant-based milk, 1 tablespoon of all-purpose flour, 1/2 teaspoon of baking powder, 1/4 teaspoon of turmeric powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until well combined.
  4. 4Add the chopped herbs and green onions, 2 tablespoons of barberries, and 2 tablespoons of chopped walnuts to the egg mixture. Stir everything together until it is all mixed in.
  5. 5Heat 2 tablespoons of olive oil in an oven-safe skillet over medium heat. The oil should be hot but not smoking.
  6. 6Pour the herb and egg mixture into the hot skillet. Cook on the stovetop for 5 minutes, or until the bottom of the frittata is starting to look set.
  7. 7Carefully transfer the skillet to the preheated oven. Bake for 25 to 30 minutes, or until the frittata is puffed up, golden brown, and a toothpick inserted into the center comes out clean.
  8. 8Let the frittata cool in the skillet for at least 5 minutes before slicing and serving. This helps it hold its shape.
