Ingredients

  • 1000 g Potatoes
  • 0.5 head Cabbage
  • 3 tbsp Dairy-Free Butter
  • 0.5 cup Dairy-Free Milk
  • 4 Spring Onions
  • to taste Salt
  • to taste Pepper

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Peel the 1000 g Potatoes and cut them into roughly 5.08 cm chunks. Place the potato chunks in a large heavy-bottomed pot and cover them with cold water. Bring to a boil over high heat, then reduce heat to medium and cook for 15-20 minutes, or until the potatoes are easily pierced with a fork. Drain the potatoes thoroughly in a colander.
  2. 2While the potatoes are boiling, remove the tough outer leaves from the 0.5 head Cabbage and shred the rest finely. Melt 1 tbsp of the Dairy-Free Butter in a 25.4 cm skillet over medium heat (176.7°C / 175°C). Add the shredded cabbage and cook, stirring occasionally, for 8-10 minutes, or until it is softened and slightly wilted.
  3. 3Finely slice the 4 Spring Onions, separating the white and green parts. Place the drained, hot potatoes back into the large heavy-bottomed pot. Add the softened cabbage, the white parts of the spring onions, and the remaining 2 tbsp of Dairy-Free Butter.
  4. 4In a small saucepan, gently heat the 0.5 cup Dairy-Free Milk over low heat (around 65.56°C / 65°C) until warm, but not boiling. Pour the warm milk mixture over the potatoes and cabbage. Mash everything together using a potato masher or a sturdy fork until well combined. Be careful not to over-mash, or the potatoes can become gummy.
  5. 5Add the green parts of the spring onions to the potato mixture. Season with Salt and Pepper to your preference, mixing gently to distribute evenly. Taste and adjust seasoning if needed.
  6. 6Divide the colcannon mixture into 8 equal portions. Gently shape each portion into a round, flat patty, about 1.905 cm thick. If the mixture is too sticky, you can lightly wet your hands.
  7. 7Wipe out the 25.4 cm skillet used for the cabbage and add a small amount of Dairy-Free Butter, just enough to coat the bottom. Heat the skillet over medium-high heat (190.6°C / 190°C). Carefully place 3-4 patties into the hot skillet. Fry for 4-5 minutes per side, or until the cakes are golden brown and have a slightly crispy exterior. Repeat with the remaining patties, adding more dairy-free butter if necessary. Drain briefly on paper towels before serving.
