Ingredients

  • 2 cans Coconut milk
  • 1/4 cup Cornstarch
  • 1/2 cup Sugar
  • 1 tsp Vanilla extract
  • 1/2 cup Toasted coconut flakes
  • 1 cup Fresh pineapple, diced
  • 1 cup Fresh mango, diced

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a medium (2-3 quart) saucepan, combine the 2 cans of coconut milk, 1/4 cup of cornstarch, and 1/2 cup of sugar. Whisk these ingredients together thoroughly until the mixture is completely smooth and there are no lumps.
  2. 2Cook the mixture over medium heat (approximately 148.9-162.8°C or 150-163°C) for 10-15 minutes, stirring constantly with a whisk or heat-resistant spatula. Continue cooking until the mixture visibly thickens, becoming glossy and able to cling to the back of a spoon without running off immediately.
  3. 3Remove the saucepan from the heat. Stir in the 1 tsp of vanilla extract until it is fully combined.
  4. 4Allow the haupia mixture to cool at room temperature for at least 15 minutes. This cooling period helps it set further before layering.
  5. 5Prepare four individual parfait glasses or small dessert bowls. Evenly layer the slightly cooled haupia mixture with the 1/2 cup of toasted coconut flakes, 1 cup of diced fresh pineapple, and 1 cup of diced fresh mango, creating alternating layers in each glass.
  6. 6Place the assembled parfaits in the refrigerator and chill for a minimum of 30 minutes. Chilling allows the haupia to fully set and enhances the refreshing quality of the dessert.
