Ingredients

  • 1 large Green cabbage
  • about 450 g Ground beef
  • 1 cup Cooked rice
  • 1 medium Onion, chopped
  • 1 medium Carrot, grated
  • about 790 g Tomato sauce
  • 2 tbsp Tomato paste
  • 2 cloves Garlic, minced
  • 1 cup Vegetable broth
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh dill, chopped

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Bring a large pot of water to a rolling boil. Carefully cut out and discard the core from the 1 large Green cabbage. Gently place the whole cabbage into the boiling water and cook for 5 to 7 minutes, or until the outer leaves are soft enough to peel away without tearing. Remove the cabbage from the water and allow it to cool for about 10 minutes, until it is comfortable to handle.
  2. 2Carefully peel off the softened leaves from the cabbage one at a time. You should be able to get about 8-10 usable leaves. Set these leaves aside. If any leaves tear, you can still use the smaller pieces to line the pot later.
  3. 3In a large bowl, combine the about 450 g Ground beef, 1 cup Cooked rice, 1 medium Onion chopped, 1 medium Carrot grated, 2 cloves Garlic minced, 1 tsp Salt, and 0.5 tsp Black pepper. Mix everything together with your hands until it is well combined. Do not overmix.
  4. 4Lay one cabbage leaf flat on a clean surface. Place about 1/4 cup of the beef mixture near the stem end of the leaf. Fold the sides of the leaf inward over the filling, then roll it up tightly from the stem end towards the tip. Repeat this process with the remaining cabbage leaves and beef mixture.
  5. 5In a large, heavy-bottomed pot or Dutch oven, heat the 2 tbsp Olive oil over medium heat (about 175°C / 175°C). Carefully place the cabbage rolls into the pot, seam-side down, packing them snugly together. If you have any torn cabbage pieces, you can place them on top of the rolls.
  6. 6In a separate bowl, whisk together the about 790 g Tomato sauce, 2 tbsp Tomato paste, and 1 cup Vegetable broth until smooth. Pour this sauce evenly over the cabbage rolls in the pot.
  7. 7Bring the sauce to a gentle simmer over medium heat. Once simmering, reduce the heat to low (121.1°C / 120°C), cover the pot tightly, and cook for 1.5 to 2 hours. The cabbage rolls are done when the cabbage is very tender when pierced with a fork and the beef filling is cooked through. The internal temperature of the beef should reach 71°C.
  8. 8Carefully remove the cabbage rolls from the pot. Serve hot, garnished with the 2 tbsp Fresh dill, chopped.
