Dairy-Free German Potato Salad with Bacon

Ingredients

  • 2 pounds Potatoes
  • 8 slices Bacon
  • 1/2 medium Onion
  • 1/2 cup Vegetable broth
  • 1/4 cup Apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 teaspoon Sugar
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Instructions

  1. 1Place potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  2. 2While potatoes are cooking, cook bacon in a large skillet over medium heat until crispy. Remove bacon and set aside, reserving bacon grease in the skillet.
  3. 3Add chopped onion to the skillet with the bacon grease and cook until softened, about 5 minutes.
  4. 4In a small bowl, whisk together vegetable broth, apple cider vinegar, Dijon mustard, sugar, salt, and pepper.
  5. 5Slice the slightly cooled potatoes and add them to the skillet with the onion. Pour the broth mixture over the potatoes and cook, stirring gently, until heated through.
  6. 6Crumble the bacon and sprinkle over the potato salad. Garnish with fresh parsley.
