Ingredients

  • 2 cans Fava Beans (canned or dried)
  • 3 cloves Garlic
  • 3 tablespoons Lemon Juice
  • 1 teaspoon Cumin
  • 2 tablespoons Olive Oil
  • 2 tablespoons Tahini
  • 1 teaspoon Hot Sauce (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoons Chopped Parsley (for garnish)

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1If you are using dried fava beans, soak them overnight. Then, place the soaked beans in a large heavy-bottomed pot and cook them until they are tender, which will take about 1 to 2 hours. If you are using canned fava beans, you can skip the soaking and cooking steps and use them directly from the can.
  2. 2Drain the fava beans if they were cooked or canned. Place the drained fava beans in a medium pot. Use a fork to mash the fava beans slightly. You want them to be mostly whole but with some broken apart.
  3. 3Add the 3 cloves of minced garlic, 3 tablespoons of lemon juice, 1 teaspoon of cumin, 2 tablespoons of olive oil, 1 teaspoon of salt, and 0.5 teaspoon of black pepper to the pot with the mashed fava beans. Stir everything together until it is well combined.
  4. 4Place the medium pot over medium heat. Heat the fava bean mixture for 5 to 7 minutes, stirring occasionally, until it is warmed through. The stew should be steaming gently.
  5. 5Carefully spoon the hot fava bean stew into serving bowls. Drizzle the 2 tablespoons of tahini over the top of the stew. If you are using the hot sauce, add a small drizzle of the 1 teaspoon of hot sauce now. Finally, sprinkle the 2 tablespoons of chopped parsley over the top as a garnish.
