Ingredients

  • 1.5 lbs Chicken breast
  • 1/2 cup Dairy-free yogurt (cashew-based)
  • 2 tbsp Ginger-garlic paste
  • 2 tbsp Tikka masala spice blend
  • 1 tbsp Lemon juice
  • 2 tbsp Coconut oil
  • 1 medium Onion
  • 2 tbsp Tomato paste
  • 1 can (28 oz) Canned crushed tomatoes
  • 1/2 cup Coconut cream
  • 1 tsp Salt
  • 2 tbsp Cilantro
  • 1 head Cauliflower

Instructions

  1. 1In a bowl, marinate chicken with dairy-free yogurt, ginger-garlic paste, tikka masala spice blend, and lemon juice. Let it sit for at least 30 minutes.
  2. 2Grate the cauliflower into rice-like pieces using a food processor or a grater. Set aside.
  3. 3Heat coconut oil in a large pot over medium heat. Add chopped onion and sauté until golden brown.
  4. 4Add tomato paste and cook for 2 minutes. Stir in crushed tomatoes and simmer for 10 minutes.
  5. 5Add marinated chicken to the pot and cook until chicken is browned.
  6. 6Pour in coconut cream and simmer for 20 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. 7While the curry simmers, steam or sauté the cauliflower rice until tender.
  8. 8Garnish chicken tikka masala with cilantro and serve hot with cauliflower rice.
