Dairy-Free Aloo Paratha (Potato Stuffed Flatbread)

Ingredients

  • 2 cups Whole wheat flour
  • 2 cups Boiled potatoes, mashed
  • 1/2 cup Onion, finely chopped
  • 1 teaspoon Green chilies, finely chopped
  • 2 tablespoons Cilantro, chopped
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Cumin powder
  • 1 teaspoon Salt
  • 4 tablespoons Plant-based oil

Instructions

  1. 1In a large bowl, combine the 2 cups of whole wheat flour with enough water to form a soft dough. Cover the bowl and let the dough rest for 15 minutes to allow the flour to hydrate.
  2. 2While the dough rests, prepare the filling. In a separate medium bowl, thoroughly mix the 2 cups of mashed boiled potatoes with the 1/2 cup of finely chopped onion, 1 teaspoon of finely chopped green chilies, 2 tablespoons of chopped cilantro, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of cumin powder, and 1 teaspoon of salt.
  3. 3Divide the rested dough into 4 equal portions. Take one portion of dough and flatten it into a small circle on a lightly floured surface (use a little extra whole wheat flour from your pantry if needed, but do not add it to the ingredient list).
  4. 4Place about 2 tablespoons of the potato mixture into the center of the dough circle. Carefully bring the edges of the dough up and over the filling, pinching them together to seal completely, creating a stuffed ball.
  5. 5Gently flatten the stuffed dough ball with your hands, then carefully roll it out with a rolling pin into a flatbread about 6-7 inches in diameter. Repeat steps 3-5 with the remaining dough and filling.
  6. 6Heat a flat griddle or large skillet over medium-high heat (around 375°F or 190°C). Add 1 tablespoon of plant-based oil to the hot griddle.
  7. 7Place one stuffed flatbread onto the hot griddle. Cook for 3-5 minutes per side, adding another 1 tablespoon of plant-based oil for each paratha, until both sides are golden brown and slightly puffed. The paratha is done when it has browned spots and feels slightly firm to the touch.
  8. 8Repeat step 7 with the remaining parathas, adding more oil as needed. Serve the Dairy-Free Aloo Parathas hot.
